Healthy and Tasty Eggplant

Eggplant is something that many people don't know what to do with, how to cook or prepare. If you look up the recipes of eggplant online or in a cook book, you are likely to find that most recipes are involved and complicated. However, eggplant has many health benefits and it is among the tastiest food. But, it is an acquired taste so eggplant is not for everyone.

We interview one lady who never had eggplant before. She knew what it was and has seen it around plenty of time but she never tried it until one day and it changed her life for the better!

 

What is your story with the eggplant?

Only recently did I discover the health-full benefits of eggplant. I never even tasted it until 6 months ago because I didn't know how to prepare it. This summer my husband planted it and I have been eating it almost daily.

 

How do you prepare eggplant?

I grill it after basting it with olive oil and sprinkle a little garlic powder on it.

Sometimes I melt a little low fat provolone cheese and cover it with a little store bought pasta sauce.

 

Why is eggplant healthy?

Eggplant is low calorie, only 24 calories per cup with 0 fat, 2 mg sodium, 6 carbs, 3 fibers and 1 protein. It is also high in potassium, manganese and vitamin K among other things.

The health benefits of eggplant are enormous but the reason I keep eating it is because it tastes so very good.
